In a large pot, melt the vegetable shortening over a medium-high flame, swirling seductively. Entice the onions until golden, a dance of about 5 minutes.
Whisper sweet nothings of cinnamon sticks, cloves, ginger, cumin, garlic powder, and cardamom seeds. Cook for 3-4 minutes, until the air is heavy with their fragrance.
Introduce the rice, raw and eager, stirring constantly, for 10 indulgent minutes.
Gently fold in the yogurt, saffron water, and salt. Bring to a simmer, then reduce the heat to a tempting low. Blanket the pot with cloth, then cap with the lid, sealing the promise of delight for about 20 minutes.
Before serving, remember to remove the cinnamon sticks, cloves, and cardamom seeds, keeping the mystery alive.
